Ingredients

An ingredient encyclopedia: what each product is and what to replace it with in Peru, organized by food type.

Every ingredient has its own overview page and, where relevant, a Peruvian substitution guide (sustituto-peru). Independent of any single recipe — a general reference.

Ingredients are organized by food type, not by recipe:

  • Pantry: seasonings, oils, flours, and other shelf-stable products.
  • Dairy: milk, butter, cheese, and cream.
  • Processed: canned goods, frozen foods, and other second-transformation products.
  • Fresh produce: vegetables, fruit, and other fresh products.
  • Meat: beef, pork, chicken, and other meats.
  • Fish & seafood: products from the sea.
